Ingredients

  • 1.5 lbs boneless skinless chicken thighs

  • 1 cup long grain white rice

  • 1/3 cup honey

  • 1/4 cup soy sauce

  • 1/4 cup chicken broth

  • 4 cloves garlic minced

  • 1 tsp ground ginger

  • 1/2 tsp black pepper

  • 1 tbsp olive oil optional for searing

  • 1 cup frozen peas and carrots optional

Directions

  • 1. If desired, heat olive oil in a skillet over medium high heat and sear chicken for 2 to 3 minutes per side until lightly browned.

  • 6. If using frozen peas and carrots, stir them in during the last 30 minutes of cooking.

  • For a lighter version, swap chicken thighs with chicken breasts and reduce honey to 1/4 cup.
