Ingredients
1.5 lbs boneless skinless chicken thighs
1 cup long grain white rice
1/3 cup honey
1/4 cup soy sauce
1/4 cup chicken broth
4 cloves garlic minced
1 tsp ground ginger
1/2 tsp black pepper
1 tbsp olive oil optional for searing
1 cup frozen peas and carrots optional
2 green onions sliced for garnish

Directions
- 1. If desired, heat olive oil in a skillet over medium high heat and sear chicken for 2 to 3 minutes per side until lightly browned.
- 2. Place uncooked rice, minced garlic, ground ginger, and black pepper in the slow cooker and stir to combine.
- 3. Add the chicken thighs on top of the rice mixture.
- 4. In a small bowl, whisk together honey, soy sauce, and chicken broth, then pour evenly over the chicken and rice.
- 5. Cover and cook on low heat for 4 hours until chicken is tender and rice is cooked through.
- 6. If using frozen peas and carrots, stir them in during the last 30 minutes of cooking.
- 7. Once done, fluff the rice with a fork, garnish with sliced green onions, and serve immediately.

Notes
- For a lighter version, swap chicken thighs with chicken breasts and reduce honey to 1/4 cup. Store leftovers in an airtight container in the refrigerator for up to 3 days, and reheat in the microwave with a splash of broth to keep it moist. Serve this dish with a side of steamed broccoli or a crisp green salad for a complete and balanced meal.
