Ingredients

  • 200g dried noodles

  • 1 cup shredded carrots

  • 1 cup thinly sliced cucumber

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tsp honey

  • 1 clove garlic minced

  • 1 tsp ginger grated

  • 2 tbsp chopped cilantro

  • Salt and pepper to taste

Directions

  • 1. Cook the noodles according to package instructions, then rinse under cold water and drain thoroughly.
  • 2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger to make the dressing.
  • 3. Prepare the vegetables by shredding the carrots, slicing the cucumber thinly, and slicing the bell peppers.
  • 4. If using protein, cook the chicken or tofu until fully cooked and allow it to cool.
  • 5. Begin layering the mason jar by pouring the dressing into the bottom of the jar.
  • 6. Add the shredded carrots and sliced bell peppers on top of the dressing.
  • 7. Next, add the cooked noodles, pressing them down gently to fit.
  • 8. Top with the sliced cucumber, cooked protein, and chopped cilantro.
