Ingredients
2 large sweet potatoes, peeled and cubed
2 tbsp olive oil, divided
1 lb ground beef
1 tsp salt
1/2 tsp black pepper
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cumin
1 cup cottage cheese
1/4 cup honey
1 tsp chili flakes
1 cup baby spinach
2 green onions, sliced

Directions
- 1. Preheat oven to 200C (400F). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 to 30 minutes until tender and slightly crispy.
- 2. While potatoes roast, heat remaining 1 tbsp olive oil in a skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
- 3. Add ground beef to the skillet. Cook, breaking it up, until browned and cooked through, about 8 to 10 minutes. Season with paprika, cumin, and additional salt and pepper to taste.
- 4. In a small bowl, mix honey and chili flakes to make hot honey. Adjust spice level as desired.
- 5. To assemble, divide roasted sweet potatoes and cooked beef among bowls. Add a scoop of cottage cheese to each bowl.
- 6. Top with baby spinach and sliced green onions. Drizzle generously with hot honey.
- 7. Serve immediately.

Notes
- For a substitution, use ground turkey or chicken instead of beef for a leaner option. To store, place leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the microwave or on the stovetop until warmed through.
