Ingredients
2 cups water
1/4 cup granulated sugar
2 tablespoons gelatin powder
2 tablespoons instant coffee granules
1 teaspoon vanilla extract
1 cup cold water
Whipped cream for topping (optional)
Chocolate shavings for garnish (optional)

Directions
- 1. In a small bowl, sprinkle the gelatin powder over 1 cup cold water and let it sit for 5 minutes to bloom.
- 2. In a saucepan, combine 2 cups water, sugar, and instant coffee granules. Heat over medium heat, stirring constantly, until the sugar and coffee are fully dissolved, about 3-4 minutes. Do not let it boil.
- 3. Remove the saucepan from heat and add the bloomed gelatin mixture. Stir continuously until the gelatin is completely dissolved.
- 4. Stir in the vanilla extract if using.
- 5. Pour the mixture into a square dish or individual molds.
- 6. Refrigerate for at least 4 hours, or until the jelly is fully set and firm.
- 7. Once set, cut the jelly into cubes or unmold it if using molds.
- 8. Serve chilled, optionally topped with whipped cream and chocolate shavings.

Notes
- For a vegan alternative, replace gelatin with agar-agar powder using the same quantity. Store the coffee jelly in an airtight container in the refrigerator for up to 5 days. Enjoy it as a light dessert on its own or pair it with a scoop of vanilla ice cream for a decadent treat.
