Ingredients
2 large onions
1 cup all purpose flour
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup buttermilk
1 large egg
1 cup breadcrumbs
4 cups vegetable oil for frying
1/2 cup mayonnaise
2 tbsp ketchup
1 tsp Worcestershire sauce
1/2 tsp paprika
1/4 tsp garlic powder

Directions
- 1. Peel the onions and cut them into 1/2 inch thick slices, then carefully separate them into individual petals.
- 2. In a medium bowl, whisk together the flour, paprika, garlic powder, salt, and black pepper.
- 3. In a separate bowl, combine the buttermilk and egg, whisking until smooth.
- 4. Pour the vegetable oil into a deep pot and heat to 180C (350F), using a thermometer for accuracy.
- 5. Dip each onion petal first into the flour mixture, then into the buttermilk mixture, and finally back into the flour mixture to ensure a thick, even coating.
- 6. Working in batches to avoid crowding, gently lower the coated onions into the hot oil and fry for 2 to 3 minutes until they turn deep golden brown and crispy.
- 7. Use a slotted spoon to remove the bites and place them on a plate lined with paper towels to drain excess oil.
- 8. For the dipping sauce, mix the mayonnaise, ketchup, Worcestershire sauce, paprika, and garlic powder in a small bowl until fully blended and smooth.
- 9. Serve the onion bites immediately while hot, accompanied by the dipping sauce on the side.

Notes
- For a substitution, use regular milk mixed with a splash of vinegar instead of buttermilk. Store leftovers in an airtight container in the refrigerator for up to two days; reheat in a preheated oven at 200C (400F) for 5 to 7 minutes to regain crispiness.
