Ingredients
1 large head cabbage cut into 1 inch thick steaks
3 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
3 cloves garlic minced
1 tsp dried thyme
1 tsp paprika
1/2 tsp onion powder
1 tbsp lemon juice
2 tbsp fresh parsley chopped

Directions
- 1. Preheat the oven to 200C (400F) and line a baking sheet with parchment paper.
- 2. Cut the cabbage into 1 inch thick steaks, keeping the core intact to hold them together.
- 3. In a small bowl, mix the olive oil, minced garlic, dried thyme, paprika, and onion powder.
- 4. Brush both sides of each cabbage steak generously with the oil mixture.
- 5. Season both sides with salt and black pepper.
- 6. Place the cabbage steaks on the prepared baking sheet in a single layer.
- 7. Roast for 20 to 25 minutes, until the edges are crispy and browned.
- 8. Remove from oven, drizzle with lemon juice, and sprinkle with fresh parsley before serving.

Notes
- For a different flavor profile, substitute thyme with rosemary or oregano. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a 180C (350F) oven for 5 to 10 minutes to restore crispiness. Serve as a side dish with grilled chicken or fish, or enjoy it as a light vegetarian main course with a dollop of yogurt or tahini sauce.
