Each bite delivers a fudgy, melt in your mouth texture with a crackly top and subtle nutty notes from pistachios. Inspired by Middle Eastern flavors, it is a luxurious treat that feels both exotic and comforting.
Ingredients
1 cup all purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 cup unsalted butter melted
2 large eggs
1 tsp vanilla extract
1/4 tsp salt
1 tsp ground cardamom
1/2 cup chopped dates
1/4 cup chopped pistachios

Directions
- 1. Preheat the oven to 180C (350F) and line an 8×8 inch baking pan with parchment paper.
- 2. In a medium bowl, whisk together the flour, sugar, cocoa powder, salt, and ground cardamom.
- 3. In a large bowl, mix the melted butter, eggs, and vanilla extract until smooth and well combined.
- 4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
- 5. Gently fold in the chopped dates until evenly distributed throughout the batter.
- 6. Pour the batter into the prepared pan and spread it into an even layer.
- 7. Sprinkle the chopped pistachios evenly over the top of the batter.
- 8. Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
- 9. Remove from the oven and let the brownies cool in the pan for 15 minutes.
- 10. Transfer to a wire rack to cool completely before cutting into squares and serving.

Notes
- For a gluten free option, replace the all purpose flour with a gluten free baking blend. Store the brownies in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week. Reheat briefly in the microwave for a warm, gooey treat. Serve these brownies with a scoop of vanilla ice cream or a drizzle of honey for an extra decadent dessert.
